An easy, high-protein dinner

…for when you don’t feel like putting much effort in 😉

I am the QUEEN of quick and simple meals. Contrary to popular belief (I’m a dietitian) I do not like to cook (strongly dislike may be more appropriate here). Whatever I make needs to be quick, filling, and nutritious.

That’s where my next dish comes in – sheet pan turkey sausage and veggies!

Since I’m staying in an Airbnb, I don’t have access to my usual cooking supplies and had to make do with what was available. With that being said, technically this is a TWO sheet pan meal, but if you have a big enough pan, you can fit everything on one. I had to cook the veggies on one pan in the oven and then cook the turkey sausage in a smaller pan in a toaster oven so they both came out at the same time and it worked out just fine.

Prep Time: 5 minutes

Cook Time: 25 minutes

Total Time: 30 minutes

Ingredients:

  • 1 red onion, cut into thick slices
  • 1 red pepper, cut into thick slices
  • 2 turkey sausage links, cut into 1/4 in slices
  • 1 zucchini, cut into large chunks
  • 1 cup pre-sliced baby bella mushrooms
  • 1 TBSP olive oil
  • Seasoning salt to taste
  • Optional: serve over jasmine rice or potatoes 

Directions:

  • Preheat oven to 400 degrees Fahrenheit
  • Add veggies and turkey sausage to a sheet pan and toss with olive oil and seasoning. Note: too much oil will make the veggies soggy. 
  • Cook for 20-25 minutes.
  • Optional: I bought the Organic Jasmine Rice from Trader Joe’s to go with mine. It comes frozen and heats up in the microwave in 3 minutes! However, if you want to keep this low-carb, you can leave it as is. 
  • Let cool for a couple of minutes before serving and enjoy!

This was an easy meal that’s full of color and you can customize however you’d like! If you have room, you could also throw some potatoes on the pan or any other veggies you like.
