If you’re looking for an easy low-calorie sweet treat heading into Fall, you’ve got to try these s’mores ice cream sandwiches!
I made these on a whim. They were a huge hit in my house and it took less than 10 minutes to whip up. Check out the details below.
Ingredients:
- 1 box cinnamon graham crackers. You can use the plain ones, of course, but cinnamon is superior
- 1 bag of Ghirardelli dark chocolate chips (I used about half a bag for this recipe)
- 1 container of Coco Whip coconut whipped topping
Directions:
In a 10 x 10 aluminum container, place graham crackers in a layer covering the bottom of the pan. Melt 115 grams of chocolate chips in a microwave-safe bowl. Spread melted chocolate over graham crackers.
Empty the container of whipped topping into the pan and spread into an even layer on top the graham crackers and chocolate. Last, place one more layer of graham crackers to cover the top. Put the pan in the freezer for a few hours before enjoying!
Notes:
You can use regular whipped topping if you prefer. Personally, it hurts my stomach so I used a DF version LOL. It does have a slight coconut flavor but I didn’t feel like it was overpowering.
Also, these got better the longer they were in the freezer! The graham crackers got slightly softer and made them crumbly.
